Wikipedia agrees with you; apparently sometimes she can shift and 
sometimes she can't. My bad.

Ah, no, he didn't. That's why I quoted that whole thing, to try to 
show that. To condense, here's what Peter says, and a few relevant 
sentences from a bit later:
"Ah, thank you, sir," Peter said. "I . . . I'm just going one
day at a time?"
“E h? Oh! Doreen, this is Professor Warren, our science
teacher. Professor, this is Doreen, my . . . er, we're still uh
. . ."
[Doreen and Ray shake hands]
"Please, call me Professor Ray," the man said. "And this," he
indicated the leaner man, "is my brother Miles, he's teaching
an advanced course here at M3 for the second year in a row."

(So from that I assume that the brother is Miles Warren, which the 
narrator confirms a paragraph or two later.)

And I don't see any names mentioned by the other people there either. 
Looks like Peter's dialogue got swapped in a previous edit? Maybe I'm 
still misreading something but I read the original a couple times 
hunting for first use of Ray/Raymond. :/

Also, sorry if I wasn't clear with my original query. Doreen seems to 
be the primary narrative voice in that scene, so it feels weird to me 
to have her know someone's name when I don't remember them being 
introduced previously, and don't see an introduction in the scene itself.

Hah! Now I guess I just have to find the time to do it, ne?
And this is the Marvel Cinematic Universe so I guess I should be 
looking for live photos of each rather than comic/animated versions.
It may be a few months but I'll put that in my creative queue :)

With Tony, and the phrasing he used... that was just the first thing 
that popped into mind. :D
