My guess would be that if two cursed people did it, they'd swap curses. 
Assuming Cologne's exposition in the middle part was correct, then 
curses need to stay curses, so if (for example) Ranma's curse was 
acquired by a woman then said woman would be cursed to turn into a man. 
I can, however, see any of his fiancees not realizing this and 
volunteering to take his curse, thinking it won't do anything to her 
because she's a girl anyway. If a cursed character had intercourse 
*while in cursed form,* I'm not sure; either he/she would spontaneously 
revert to normal, or as you say the cursed form would be locked. Either 
way the partner would acquire the curse, or the curse in reverse. I 
don't really want to think about what this would mean for the ones with 
animal curses, though it could make interesting drama as they decided 
whether or not to try it.

Thanks, Bert. I'm still working on HaM, and after that I Dream of Ranma, 
and will finish both though I'm not sure anyone wants to read them at 
this point.
