Look for a "text" or "plain text" option.

Some mail clients let you choose between "rich" or "HTML" email, which
gives you fonts, colors, images, and other stuff.  Unfortunately, it's
also not compatible with older email clients, and in the worst cases,
can be used to transmit viruses.  (If, say, your HTML client
auto-executes things linked to in a particular way, such as if your
client is mixed with certain versions of MSIE.)  It is for that reason
that the FFML scrubs HTML attachments.

This is not a problem with most well-written mail clients, which send
a text copy as well as an HTML copy.  For instance, I am using GMail
to compose this, which composes in HTML mode but also sends a
plaintext version.  But some clients will only send either HTML or
plaintext.  The simplest solution is to set it to plaintext.  (And,
frankly, most people can just leave it in plaintext for all purposes.
The claimed benefits of HTML email simply don't apply to most email,
no matter what the marketers say.)
