Welcome to the wonderful world of fanon.  It doesn't have to make sense for 
it to become widely used.

See, some writer probably thought that eating ice cream was a feminine 
trait, and so gave Ranma that opinion, and that thought meme propogated 
itself.

Now, is eating ice cream girly?  I don't think so, though I can see where 
some would think it rather hedonistic.


Oh, and speaking of using ice cream as a plot device, I'm guilty of that 
myself, though I certainly didn't tag a gender-role to the art of ice cream 
eating in the scene where ice cream helped to move the story along....
 

At the beginning of the episode where Shampoo is introduced, Ranma is 
eating a Parfait.

Ranma clearly states that it's ok for her to eat it now as she is a 
girl. Guys don't eat parfaits.
