As you know by now, it's canon that *Ranma* thinks
icecream desserts are girly, and always goes girltype
to eat them.  

We use it because it's also canon that he *likes*
icecream, so he actively chooses to go girltype in
order to indulge.  

We can spark off a lot of ideas from these two facts. 
For example, having Ranma go out for icecream is an
easy yet IC way to get Ranko in the fic.  Yuri writers
can have Ranma and the Fiancee Of Choice having a late
night bowl that goes somewhat further than originally
intended; yaoi writers can use the fact that Ranma has
IC found a benefit to going girltype to springboard to
finding *other* benefits to going girltype that carry
over when he returns to male form.

So it's ubiquitious, but that's because it's *useful*.
