I don't think it is so much the "plot-hole" per se, as just not well explained /in the context of this story/. Or is how it was in context to Takahashi's original story in comparison to this story.

One of the major plot points of it, is that Akane was /devoted enough/ to make sure that Ranma and Ryoga were deaged correctly. She was even sneaky enough to be growing a backup set of mushrooms when the second (or third) set of mushrooms was destroyed.

I can't speak for the authors about the Potterdom part of the plotline, 
but the aging mushrooms are straight out of Ranma manga. As such, your 
concerns about plot holes in that section of the story should be 
directed towards Rumiko Takahashi.
