In dub continuity at least, it is mentioned that Ami's Mother is a Doctor. 
Part of why Ami was about to leave to study in Germany. Of course, dub 
continuity also has Makoto's (Lita in the dub) parents, or her mom at least, 
still alive. That happened during one of first episodes of the Daimon saga 
where Makoto/Lita tells Usagi/Serena "My mom's allergic to cats."

I suppose one could say that she is still attempting to maintain the fiction 
that she's not an orphan, but on the other hand, the dub is an alternate 
continuity with its own rules.

Also do any of the parents of the Senshi ever find out about their 
daughter's extra-curricular activities? If yes who and when in the 
story line.

Not to my knowledge, no. That seems to be strictly fanfic.
