Fanfic 'Motherly Love' does this, along with a few others I can't
remember the names of.

she learns of the Nekoken training, immediatly after genma compleats it,
and demands sepku(?). Genma of corse bargans for his life, and She takes
over the Training. 

Would she really think acting like a cat is unmanly?  Besides, 
contract is for both Genma and Ranma to kill themselves.

He writes the itinerary, and the training methods(big Mistake) that she
would use.

Nope, she isn't that stupid.  She would do the exact opposite
since it was Genma's idea for the cat-fist.

Would Nadoka seek out Happosi so ranma could learn the Anything goes
stile from a true master(sweatdrop)?

Doubt Genma would tell her where Happi was sealed up or let
her let him out.

She would probably teach him the sword stiles she knows as well.

Does she?  In the manga she carries the sword, but is shown that
she has no real idea how to use it.

would she make ranma wait for Ryoga to show up for the fight?

Would she let the fight happen at all?
