Having never actually SEEN GW I can't be sure of this, but the
gundams are presumably constructed out of steel and metal and stuff like
that, while the Evas are made out of (synthethic) flesh and blood. A one
hundred foot tall robot made out of steel would be much weaker relative
to its size than a five foot tall one would be; for whatever reason,
this doesn't seem to apply to Evas. 

     Sending a gundam up against an Eva would be like building a four
foot tall robot out of cardboard boxes and sending it against Ryoga
Hibiki. 

     On the flipside, Evas aren't designed for combat in space. Even if
you equpped one with strap-on thrusters, it would still be too massive
to manuver well.

     'Course, I know zero zilch zip about Gundam Wing, and I'm hardly an
expert on Evangelion, so I could be completely wrong. <shrug> your
choice I suppose...
