It is my understanding that honor is not usually discussed directly in
Japanese society, so it doesn't surprise me that you don't find any
mention of it in the manga.  It happens in fanfics all the time,
necessarily, because Western civilization tends to be much more blatant
about these things.  (If someone else has a better understanding of
Japanese society and I'm wrong in this, please correct me.)

Many of the situations that arise indicate the workings of honor, even 
if the word itself isn't mentioned. The engagements, Genma and Ranma's
'manly' pledge to Nodoka, etc.  Ranma always seems to rail against these
things, but he also takes them seriously.
