Up for grabs with regards to actual cannon sources. It could go either
way, depending on what you need for your fic.

Depends on what you mean.  The angels in Eva have powers that correspond
to the names they carry.

Try any book on Kabbalah. Or the bible/Torah. Also the Koran.

There are no female angels or--incedentilly demons--all of them are
traditionally refered to with the male pronoun.  In Eva the angel Lilith
is female, however, in traditional Jewish mythology she is the first
woman, created with Adam and cast out of Eden for refusing to submit to
his dominion.  The Eva fanfic Eva-R also has a female angel named
Malachi.
