How about Star Wars and...I don't know...Totoro.  Or Star Wars and
Nadia.  Maybe Star Wars and Kenshin.  Something absolutely ridiculous,
and then try and make a serious fic out of it.  Somebody does that,
and then I'll start reading cross-over more often.

	Your point seems to be that crossovers should be challenging, in
terms of meshing the two series together.  Which, I guess, is probably
true.  To a degree.  But I think the challenge of writing a crossover can
also come from just making a good story of it, creating an interesting
plotline and developing the characters.  I'd think one could focus more
on the story aspect of it if one picked two easily-meshable serieses, so
that's what I'd choose to do.  Probably more personal preference than
anything else...
	On the other hand, why try to write a serious crossover at all? 
Humor's a great style, if done well.  I especially dig off-the-wall
insanity-type humor.  Star Wars and Totoro? :D

A Ranma/Star Wars crossover isn't too difficult when you think about it.

	...I know next-to-nothing about Ranma, only enough to know it'd
be more difficult than Tenchi to integrate with Star Wars.
