If you are a fanfic writer, they can be durable as you want them to
be.  One of my roomies, who is creating a Ranma/Tenchi/Union of
Byzantia alternative universe [yes, he asked for permission and got
it], claims that  Pig-boy's Breaking Point technique makes him so
durable that he could be bullet-proof.

However given the description of their stamina and strength in the

manga and

anime, they should be able to withstand such attacks or at least

dodge them.

Not required, really.  Each author creates his or her own rules when
creating a fanfic.  If you want them to dodge bullets and cars, so be
it.
