Actually, it's only my interpretation, but the age of legend, could be, ahh, the mature version of Crystal Tokyo after a few 1000 years; after all the age preceding the age of legend and the age of legend is said to have forgotten the art of war, which was recreated during the war of power...
As to the when the portal stones were made, it's never explicely stated out loud that it was made during the age of legends, only that they were around back then...
'sides the way time works in the WoT reality is that it's like a mobieus loop, a never-ending taperstry, the portal stones could possibily be the pins holding the loop/taperstry together, which if accessed properly would work like a "Macross/SDF-style spacefold" capable of pulling threads from point of the loop to another. Anyways the Galaxy Cauldron just might be the pyscial manifestation of the One Power, but have to agree with you about the high chance that Chaos might be Shaitan, Lord of the Dark.
