Very true, Ranma denys it, but his personality does change when her
becomes a girl.

My theory? Hormones.

Nothing in the manga to support this.  On the other hand, there's more
than enough evidence to support that his "girly act" is just that -- an
act to cover how bloody uncomfortable his curse makes him.  And, more
often than not, when he goes into his ultra-kawaii girly mode, its
because he wants something:  Food, sweets, to tease Ryoga, manipulate
Kuno, etc.

Anyway, condisering his male pride, he probably thinks it's better to
over-do the girly act rather than show anyone that his curse scares the
hell out of him, after all.
