The last time in the series I'm aware it happened was volume 17 where
Ranma's engagement was switched from Akane to Nabiki. It ended with Ranma
saying 'I love you' to Akane which had meant to say to Nabiki to cause
her no end of pain from the other 'fiancees.' (That's my guess on his 
'revenge') While Akane may not have said their engagement was reinstated,
it is implied. 

Actually, Ranma's 'revenge' was even simpler than that.  He overheard that
Nabiki wanted to get rid of him.  So he decides to keep the engagement and
thus declare his love for her.  Besides nobody would have heard it and
Nabiki still could have sold him to the fiancees if any of them tried to
give her grief.
