Check out one of those Elseworlds fanfics (number 5, maybe?  Don't quite
remember...).  Happousai dunks Ranma in Spring of Drowned Lecher or something
to that extent.  Ranma's personality changes drastically with the
transformation.  'Course, this one does technically have a physical change (a
very familiar one, at that...).
