I have seen stories with each version 
  a) die as the purely biological changes occur and rip the
           changing body apart as the biomech or purely mechanical
           parts remain static...
Nightelf's "Circe Project" comes to mind here 
  b) as these are considered part of the body, would they change
          also...this would also be applicable for things like tooth fillings
          since these are also metal.
The Lurker's "Rockman" cross-over is the most recent of these.
  
c)  be displaced with the body purely biological in the cursed form,
            and having the cybernetics return when returned to normal,
            (something like Genma's clothing seems to do MOST of the
             time.)
"Ranma and Roll" by Skjam featured this.
There is one other possibility, the curse might "cure" the cyborg of being a cyborg, that is it might make them 100% organic (the reverse would also be possible, I suppose)
The point is the choice is YOURS. ( unless you believe in Revengefics).
