One reading of it is that Shampoo did not in fact love Mousse, but
wanted to see Ranma's reaction, hoping that Ranma would come and 
challenge Mousse for her hand. The sad part would be that Ranma
did not, and now she's stuck with Mousse.

I thought the point of showing Mousse unconscious (presumably 'cause
Shamps decked him) was that she *wasn't* marrying Mousse; it was just a
bluff to see what kind of reaction they'd get from Ranma. My guess would
be that Donny considers this sad merely because Shamps didn't get Ranma.
