She's not anime, but.... amanda, highlander.  If that doesn't work, you 
could use usagi tsukino, aka sailor moon.  even though she dies then 
comes back.  Ryoko?  she has lived a real long time... not shure if it's 
just that she's long lived though.  Potentially, all purpose cat girl 
nuku nuku could be immortal... just replace outer chasis and find a way 
to keep brain alive... could proboblly be overlooked.  I'm pretty damn 
shure washuu could find a way to do it.  Ranma Saotome if you buy that 
spring of drowned young girl bit... I personally dont, but hey.  #18 
from dragonballz before she is reanimated.  Death from DC 
comics/vertigo... I know it's not an anime... but it's still damn cool. 
I would say mei from 3x3 eyes, but she just ages really slowlly. The 
lead person in ghost in the shell... whateser name... machine chasis 
as well, use the same reason as nuku nuku.  Cutey Honey, but I've just 
heard shes a robot.  Battle Angel Alita, also a cyborg.  oh well, I've 
run dry.
