That has been done (or is being done; don't think the series is finished
yet). It's "Soulmates" by Scott Schimmel <schimmel@seas.upenn.edu>.

Of course, that doesn't mean it can't be done differently, so go for it.

For instance,
imagine how Ryoga will react when Ranma, in Akane's body, discovers Ryoga's
secret? Or how Ranma and Akane will go about taking a bath? Or have it where
that happens and Ryoga gets switched with Ranma.

Ryoga and Ranma have been switched too, in "In Mind and Body" by
Florencio Merced <fmerced@pworld.net.ph>.

Again, not that there's any reason you shouldn't write your fic, as it
sounds very different from either of these; I just thought each of these
authors deserved a plug here.

BTW, everybody, the easiest way to find out whether an idea has been
done recently is to check the synopses lists; I'm pretty sure both of
these stories were on them at some point.
