I won't even GET into the 'non-canonicity' of Nihao My Concubine.  And the 
Lost Love Tunnel story doesn't provide any concrete evidence.  What DOES
is the end of Vol. 38, the end of the series. Ryouga goes to Akari--she,
in fact, is in his thoughts in the final frame you see him in, Ukyou
tolerates/accepts Konatsu (not necessarily romantically, but she seems to
end her hopes of romance with Ranma), and Shampoo and Mousse seem to be
working some of their differences out.

I feel that Akari and Ryoga are a terrible match, actually, while Ukyou and
Ryoga is a *much* more viable match.  

Why do I say this?

Because Akari is too much like Kasumi in many aspects, and wouldn't, IMO,
be able to cope with Ryoga's 'dark side,' so to speak.  Ukyou, OTOH, would
be able to, and Ryoga would likewise be able to help Ukyou out whenever
she's depressed/angry.  Akari is simply too weak of a person to be a good
pair-off for Ryoga.
