Considering they can pretend to be humans and get away with it, they've got to
be sentient.  (And I can't imagine a nonsentient acting like Droid
Avocador in the supermarket episode, for instance.)

And some of the youma, at least, seem to have roles other than just
'mindless killing machine' - most notably Tethys, from the Jadeite-arc
episode about the cruise ship.  She was referred to as being an important
servant reporting directly to Queen Beryl - and it was the fact that
Jadeite got her killed that led directly to the 'trial of Jadeite' bit at
the start of the next episode, and ultimately to Beryl's punishment of
eternal sleep.  Given that, and the fact that it seems like most of the
youma could pass the Turing Test (i.e. be mistaken for humans by those who
don't know better), I'd call them sentient.
