Aren't you being just a little redundant here?  "Too distrustful of 
Ranma" is the same thing as "Won't even allow Ranma the luxury of even
looking at a girl."  Similarly "Hot Tempered" and "Overly violent" are
the same thing in this context.  I realise you obviously dislike 
Akane, but you are rigging the contest against her.  You also forgot 
two points.  On her good points, she's also very kind to anyone who
hasn't aroused her anger.  On her bad, she can't cook.  

One notes incidentally, that Ranma feels far more comfortable with
a conflict habituated relationship than with a peaceful one, so
some of your bad points are good ones for her relationship with Ranma.

Kaori
Good qualities:  Cute, good cook, fairly considerate toward Ranma from the
little I saw, ruthless in achieving her objectives though she gives her
opponents a slight chance, admits defeat.
Bad qualitie: overly violent toward obstacles in her path.

Ruthless in achieving her objectives is NOT a good point.  

Ukyo
Good qualities:  Cute, she can cook, Patient, likes to have fun, has
priorities, Athletic though not fanatic as Akane at present, Cares for
Ranma, loyal to Ranma
Bad qualities:  Holds a grudge,

"Likes to have fun?"  I hadn't noticed that being one of Ukyou's more
prominent virtues by comparison with anyone else.  In fact, apart from
her indefatigable pursuit of Ranma, her life seems totally devoted
to work.  "Cares for Ranma" and "Loyal to Ranma" seem pretty redundant
as well.

Shampoo:

Good:  Cooks, cute, loyal to Ranma
bad:  Air headed much of the time, won't back down, poorly educated..

Unfair.  Shampoo's education may be unconventional, but in many ways
it's quite impressive.  Sure, her Japanese is bad, but how good is
Ranma's Chinese?  Ukyou also frequently turns into an "airhead" when
she's trying to impress Ranma.

And all of this is beside the point.  These choices are not made
by making an unbiased list of good and bad qualities (which this is not) 
and choosing the objectively better person.  Ukyo may be a better,
more capable person than Akane.  So?  That doesn't change the fact 
that Ranma loves her like a brother.
