You know, Zephyr and I had an interesting discussion about this a 
while back. There are two words in Japanese which can translate as 
"phoenix". One is "houou", meaning roughly "flame bird". That's the 
one Ranma and co. fought. The other is "fushichou", which literally 
means "bird which does not die." I prefer to think of actual 
phoenixes (condor-like bird, mostly scarlet plumage, resistant to 
fire, reborn in its own ashes) as "fushichou" personally. (This 
mainly stems from that being the word used to describe Suzaku in the 
Fushigi Yuugi manga.)
