I think this would depend on what point in the series you are placing
this. If Ranma has amitted to him/herself his/her true feelings towards
Akane (assuming that he/her does love Akane) that plus his/her honour
could over come his/her replustion.  You may want to devote some of the
story to Ranma's inner war.  You will have to take Mrs. Saotome into 
consideration too, given her disire to see Ranma as a 'man amoung men'.  I
don't think being married to one is quite what she had in mind for her
_son's_ future.

Second, if it becomes ovivous that Ukyo can't marry Ranma, would she accept
adoption into the Saotome family?

Why would the Saotomes be wanting to adopt her?  That would have an affect
on whether or not she accepts.
