would win a 1v1 fight with an Eva due to its air mobility and
multiple missiles.

I very much doubt that a few puny missiles will damage an Eva very
much (unless they were nuclear).  I mean, the damn things survive
explosions a whole lot more powerful than what a standard missile can
produce (e.g. explosions that destroy whole mountains).

The power cord is a vulnerable point. Even if the Evas have a 5
minute independent power supply, a Valkyrie can do evasive maneuvers
until the Eva runs out of power. No AT field. No Eva soon after.

Eva's can use rifles. :)

Also, later on in the anime, there are occasions where Eva-01 operates
at above normal performance when it has NO power (at least no
conventional power).

I'd be a fool to say that an Eva would win against a Valkyrie
unconditionally, but I'm inclined to say that the Eva would win
against a Valkyrie given that the fight doesn't get too protracted.
(Now, if the Eva has wings and an internal power source, it WOULD win
in almost every engagement.)
