I think that's intentional. I think Ryan meant to portray her as more
than a tad fanatical. Remember the description of the house, the
lifelessness of the interior.
Ranma seems a little forgiving towards Ukyo... I mean I see how
his relationship with 'Poo has improved but his Old Buddy Ucchan has only
_just_ ruined his life.
I wondered too, but when you consider how important Ukyo's friendship
is to Ranma, it seems more likely. Ranma seems to have very few close
friends, and given his unsettled life, I don't think he would so readily
give up the friendship and stability she represents, especially after the
effective loss of his mother. Also, she was truly remorseful. Anyway, it
was Akane's refusal to accept any explanation that sealed the matter. She
wouldn't listen to Ukyo, and maybe she didn't want to hear an explanation.
She earlier forgave Ryoga for being P-chan (after putting him in the
hospital), although there was no doubt as to the voluntary nature of his
actions.

One other thing, the original deal was that Ranma wed _a_ Tendo
sibling. There are two perfectly fertile and unattached young women still
in the Dojo for Nodoka to draft....
Can you see anyone drafting Nabiki? And Kasumi is impervious to all
external forces. Not even Happosai glomps her. I don't think he glomps
Nabiki either, but that's because he doesn't have a death wish.
