If there's a 'fic where Ukyou _is_ portrayed as a saint, I've never 
seen it.

An increasingly large amount of Zen's fics do.  Lessee, there's Bitter End,
where Ukyou was portrayed as "the holy saint from heaven" and Akane was
made to be seen as the "evil satanic woman from the depths of hell"... 
Need I say more?

Yes, you do.  This was not how Ukyou _or_ Akane were portrayed in BE. 
The characterization was much more complex than that.  Such comments 
lead me to beleive that you didn't read the story very closely, and 
perhaps you should try reading it again.
