More of an attitude change - that "acting like a boy" has less
significance, since hopefully gender roles have blurred (thanks in part
to manga like Ranma Nibunnoichi).

Does this mean that food made from actual animals is not the usual
fare in the future? Or do they just protest against Akari's lab
experiments? This *is*, of course, set after after a world-wide
epidemic that killed almost all livestock, so the food industry
might have changed.
The former. I'm speculating that more and more people will become
vegetarians in the future, since meat really is bad for you and an
inefficient food source (note: I am not a vegetarian myself, although
I've always said I would become one if I had the courage of my
convictions). Your note is correct: the world-wide crisis would have a
big effect, too.
