As I remember reading (ages ago), the Jabba the Hut they filmed but did not
use for Star Wars was a human(oid), not the Jabba of Jedi.  How do they
explain that?

I think what we have here is a case of reverse continuity.  Since, now, 
its quite firmly established that Jabba the Hutt is a slug, and comes 
from a species of slugs just like him (from all the books, comics, and 
other media), They figured going back and turning the origional into a 
slug would be a whole lot easier in the long run.  I mean, think about 
it.  That scene on the Sail Barge in Jedi would not look quite so 
interesting if all Leia was doing was just chocking to death some big fat 
human(oid).
