As I remember reading (ages ago), the Jabba the Hut they filmed but did not
use for Star Wars was a human(oid), not the Jabba of Jedi.  How do they
explain that?

As Mousse Lee already stated, The 'Jurassic Park' technology allows them to map 
digital images over actors.  The piece of the Jabba and Han scene I saw in the 
preview had the Jedi style Jabba, squirming about by himself, confronting late 1970s Harison Ford underneath the Millenium Falcon.
