just what do dragons represent in Chinese and Japanese cultures?
Good?  Evil?  Spirits?  Really big things that went on a loud and
annoying rampage if they didn't get their regular sacrifice of
virgins?

Dragons that go rampaging for a virgin sacrifice are European dragons.  
Asian dragons don't do such things.  They also don't hoard treasure like 
the European dragons.

I have always thought of dragons as being creatures of good.  Some are 
spirits and some aren't.
