I'm not sure whether I can suspend my disbelief about hat pig
enough to include the fact that it perfectly understands human
speech and even has human reactions like blushing.  Being
intelligent enough to give a decent fight - that I can accept.

However this is cannonical. The pig can and does understand speech. Or seems to.
