I don't know of any animation that takes place in the Crusades.  The
closest thing to fanfic involving the crusades that I know of is a short
segment in the prologue of the Sailor Moon fanfic "Renaissance" posted by
somebody calling themselves Yang Wenli.  It is really just a conversation
between Sailor Pluto and a Knight Templar in Jerusalem during the
crusades.
