I say go for it.  (I also say set your lines to about 78 characters each, 
but that's a different subject.)  There have been fanfics that diverge 
*much* more from the norm.  I'd advise that you not keep *too* strictly 
to either Ranma 1/2 or FFIII - yes, it'll be fun to see the two together, 
but the real interest (especially for those of us who've played FFIII) 
will be seeing how things would unfold somewhat differently with the 
Ranma characters in there, or how the Ranma characters might be in a 
different universe.

	Characters that don't have a Ranmaverse counterpart:

	Setzer - I know Gambler King would be nice, but then I can't imagine Gambler 
King proposing to Akane, my Celes, to marry him.

I might suggest Kirin - he's already got an airship, after all.  And he 
has a certain amount of suave charm to him, like Setzer.  Or Mikado, if 
all you want is the charm.

	Daryl - Trying to decide between Kasumi and Nodoka

If you go with Kirin as Setzer, then Monron (the female member of the 
Seven Lucky Gods Martial Artists) might be appropriate.  Likewise, Azusa 
would match with Mikado.  ("Ooh!  Kawaii airship!")  Otherwise, 
Nodoka would work - Daryl had too much of a sense of adventure to be 
Kasumi.  (Though such an alternate take would be interesting to see - 
what would Kasumi be like if she were just as nice, kind and considerate, 
but also bold, thrill-seeking and adventurous?   That's not such a bad 
idea, come to think of it...)

	Banon

Mmm.   He's a healer... Dr. Tofu?

	Emperor Gestahl

Principal Kunou.  Definitely.  Gestahl's megalomania crossed with 
Kunou-kouchou's Hawaii-mania... and of course Kefka's going to be 
frustrated with the constant attempts to cut his hair...

	Strago 

Sad as it may be to confront, I can only think of two elderly major 
characters in Ranma, and only one of them's male.  Sad as it may seem, 
you might have to use Happosai after all...  (You might tone him down, 
though - make him more like Rei's grandfather in Sailor Moon, rather than 
a panty-grabbing lunatic.)  I suppose if you were willing to change 
Strago's gender you could use Cologne for a moderately good fit.

	Shadow

Konatsu, maybe?  That would put a whole new twist on the revelation of 
Relm's father...

	Professor Cid - Thinking of Soun, but then Soun is already Akane's father!  The 
part Cid 'adapts' Celes would be kind of pointless if I choose this.

Well, you've already admitted you're changing some family relationships, 
so keeping this one in might actually be effective.
