Just because 99 out of 100 Ranma fanfic author writes story about Ryouga 
marrying Ukyou doesn't mean it is true.  Ukyou may go with Konatsu or she may be

Akari is patient and will accept whatever problem Ryouga has.

	A lot of the fanfics that hook up Ukyou with Ryouga were
written before the character of Akari was introduced in the manga --
or before the authors had any chance to see manga issues with Akari in
them.  At that time, the biggest justification for matching Ukyou and
Ryouga up was simple process of elimination.  Takahashi-sensei may
have realized this and created Akari for that reason.
