I know very little of the other scouts, but what little I have heard makes
them sound like the most interesting characters to explore in a story like

Well, the sequel to this series is Jeff Hosmer and I's Sailor Moon Z
series, in which the outer Senshi (especially Pluto) will be showing up.
They might even get solo stories, if I can think of one :)
