Ranma went after Shampoo in DSS, because it was a wound to his manly 
pride that she would lose interest in him.  It's not that he's really 
attracted to her, he just couldn't take the fact that he lost at 
something.

I doubt that just marrying Akane would give him a "normal" life in the 
Ranma-verse.  Also, in order for him to marry Akane, he'd have to admit 
that he loved her and that would also be a "loss" in a sense.
