Minna: in English this means "Everyone"

Correct.

ko: suffex that (from what I understand) stands for "wife". (I'm
basing this on the fact that Mamoru always calls Usagi "Usako".)

Oh boy are you ever WRONG.

So does that mean that when litteraly translated, Minakos name means

"Everyones wife"?

Absolutely not.

-ko does NOT mean "wife". -ko is a suffix (also used as a prefix
sometimes) which LITERALLY means "small". It is often used at the end
of feminine names. (Ex. Minako, Ranko, Eimiko, Rumiko, etc.)
